In food and in life, one must taste what is bitter to appreciate what is sweet… Troubled that memories of the past continue to invade his dreams of the present, Keiichiro Tachibana stuns all who know him by abruptly quitting his ordinary office job to open a bakery. Kyotofu Fresh Blueberry & Blood Orange Tofu Cheesecake
Black sesame crust, black sesame streusel, vanilla shiro-an cream
Cook Time: 30 Min

Crust Ingredients

  • 400 g graham cracker, crushed
  • 300 g black sesame paste
  • 100 g unsalted butter, melted

Directions

  1. Using a food processor, combine all ingredients until fully incorporated.
  2. Line the bottom of your cheesecake mold, pressing down firmly.
  3. Refrigerate.

Cheesecake Ingredients

  • 50 g cream cheese
  • 90 g granulated sugar
  • 50 g mascarpone cheese
  • 30 g sour cream
  • 100 g soymilk
  • 400 g tofu
  • 10 g miso
  • 10 g vanilla extract
  • 200 g blueberries
  • 200 g blood orange segments
  • 60 g heavy cream
  • 4 pc gelatin sheets, bloomed

Directions

  1. Combine cream cheese, sugar, and mascarpone cheese using an electric mixer at high speed.
  2. Add tofu, sour cream, and miso. Continue mixing.
  3. In a saucepan, heat soymilk and add gelatin. Add heavy cream and vanilla. Remove from heat, and combine with tofu mixture until fully incorporated.
  4. Divide mixture in half.
  5. Puree blueberries, add to one half using an electric mixer.
  6. Puree blood oranges, add to other half using an electric mixer.
  7. Pour blueberry mixture into frame over crust. Refrigerate for 30 minutes.
  8. Pour orange mixture over blueberry. Smooth top using an offset spatula.
  9. Refrigerate for 3 hours.
  10. Makes approximately ½ sheet pan.

Black Sesame Streusel Ingredients

  • 400 g all purpose flour
  • 400 g granulated sugar
  • 7 Tbsp. toasted white sesame seeds
  • 100 g unsalted butter, melted
  • 300 g almond flour
  • 200 g black sesame paste

Directions

  1. Using a food processor, combine all ingredients until fully incorporated.
  2. Spread mixture onto sheet tray in crumbles.
  3. Bake at 350 degrees for 30 minutes.

Shiro-An Vanilla Cream Ingredients

  • 200 g heavy cream
  • 500 g white bean paste
  • 3 Tbsp. vanilla paste

Directions

  1. Using an electric mixer, combine all ingredients.
  2. Whip until stiff.
  3. Refrigerate.
